Hyderabadi cuisine mainly features a wide use of rice, meats and spices. The cuisine has a great blend of Mughal and Arabic influences which is captured very well in the authentic Hyderabadi biryani and the Hyderabadi haleem. Haleem is a seasonal delicacy of wheat, barley and meat and cooked for up-to 8 hours to a porridge-like paste. Vishakhapatnam is known for its simple and healthy fare. A staple Vishakhapatnam meal constitutes a dal, rice, vegetables and a mixed curry. The prawns and fish curry of this city are very popular and often served with a prawn pickle. Favourites of this area include the spicy rasam, mulligattani (pepper water soup) and pesarattu, a dosa with the filling of upma. However the most popular dish of this area, that one can take home too, is the aavakkai, a delicious mango pickle.

Kurnool cusine has a good blend of vegetarian dishes and desserts cooked with dals. Some of the most popular items of this area include the pachadi, a chutney made of vegetables, greens, and roasted green and red chillies. The pappu koora is a lentil based dish in which boiled vegetables are stir-fried with a small amount of half-cooked lentils. The Nellore chicken biryani, is as popular in Kurnool as it is in its home city, making it the most preferred meat dish of the area. The local rendition of the Kurnool vada is called garelu, and like the rest of the state, it is consumed in big numbers as is the dosa and sambhar.
